My Portion...

I am thankful for friends, family, and friends who have become family.

That would include all of you.

I am mostly thankful that I do not have to rise at the Buttcrack of Dawn tomorrow. Why? Tomorrow is Thanksgiving, and I am not cooking a turkey.

No, I have not become a vegetarian (yet). I haven't gone macrobiotic (mostly because I'm not sure what that means), either. I sure as heck haven't lost my mind become a vegan. I still ain't cookin' a freakin' bird.

Nope.

My gal friend T. invited all residents of La Casa to her house tomorrow. She also invited approximately 12-20 other people. For Thanksgiving LUNCH. She is baking the bird; we are bringing side dishes.

My assignment was set in stone from the beginning. I am bringing my 'famous' potatoes. I realize that 'famous' is relative, and find it kind of funny. See, many of my 'famous' dishes were the result of opening the fridge and throwing whatever crap I could find into a pot. Then I simply hoped for the best.

Without further delay, the recipe (I use the term loosely) for what Chachi dubbed

Slap yer Mama Potatoes

5# potatoes
2 sticks real butter
8 oz cream cheese
8 oz sour cream
2-3 cups shredded cheddar cheese
4 oz packet of "real bacon" bits/pieces
1 can Durkee (or generic) fried onions
chopped scallions, if desired

Directions:

Peel, rinse, chop and boil potatoes in large pot.

Strain.

Add all ingredients noted above.

Mash together.

Enjoy.

***This does travel well - for short distances. Simply place finished potatoes in a ceramic container, cover with more cheese and tin foil. Place in the oven at 200 degrees or so to keep warm.***

I tried potatoes close in proximity to these, but the Evil Twin wants "regular potatoes" meaning just taters, milk and butter for Tgiving. I hope I can pull this off! LOL.

Sounds great. I'm making "riced" potatos. You boil them unpeeled and then run them through the ricer, which is a cone shaped thingiie like a collander with a wooden cone shaped thingie kinda like a rolling pin.

Makes great spude.

Oh yes. Yes! Yum. Haven't made them yet, but I suspect that it'll be me and the masher again soon. T-day saw "regular" mashed taters at the Tiny House, because I wanted people to eat and not go "what's THIS?" like I suspect (in the twisty part of my brain) they would.

Turkey day is never good time to try a new recipe. Ir, to make homemade cranberry sauce, apparently. *Sigh*

Aren't you glad you didn't have to get all up on it then and make a turkey?

I'm kidding! Hopefully not too offensively so!

I hope you, Chachi, and the Nooze had a delightful Turkey Day.

And I can't wait to make those potatoes! I'm having Christmas dinner at my house this year for our family, so this will be a nice recipe to add to the list. Thanks for sharing it.
