Slap Yo Momma Potatoes - *UPDATED*

Since it's still *technically* the holiday season, I thought I would go ahead and share one of our favorite recipes. I created this approximately 8 years ago, in an attempt to stretch a small amount of potatoes into serving about 10-15 people. Please feel free to modify this with ingredients that you love. Bear in mind, however, that this recipe is not really meant to be healthy. It is meant to be a treat, enjoyed (in moderation) during the holiday season. If you do, however, have good, tasty options/alternatives for some of these ingredients, please feel free to share.
Ingredients
5# bag of potatoes (Brand/type doesn't matter)
1 stick butter (Real only, please. Margarine is NOT your friend)
1/2 cup (approx) sour cream
8 oz package of cream cheese (You can use low fat or the Neufachel stuff, I don't taste a difference)
8 oz package shredded cheese (Whatever kind you like. I'm a fan of Colby-Jack)
1 package bacon bits (Real only, please, not imitation. Those just taste weird.)
Scallions to taste
*French Fried Onions
salt
pepper
Peel, cut and boil the potato until cooked, then drain. Place back into cook pot, adding butter, cream cheese and sour cream. Blend with hand mixer (of food processor if you choose). Mix until smooth. ( You may add additional sour cream to smooth the blend if needed.) Add cheese, bacon bits, scallions, salt and pepper. Additional spices may be added if you choose. Serve with meal of your choice...or AS a meal.
Place leftovers in lidded container to be reheated the next day - or made into pancakes.
To make Potato Pancakes
Remove leftover potato from refrigerator. Add one egg, mixing thoroughly.*
Heat cast iron skillet to HOT. Add butter just before placing pre-formed pancakes into skillet.
Fry on both sides, warming through. Serve plain or with topping of your choice.
*You may also opt to add leftover turkey or ham, effectively creating an all - in - one meal.

Those potatoes will peel easier if you boil or at least blanch them first. Skin slides right off with no waste and no need for a peeler or knife. Works better if they're still warm though. You can cut before or after, your choice though the skin is a little easier to get a grip on if you quarter (or more) them first.
Other than that, I wouldn't change a thing here! Sounds awesome!
Hmmmm, I'd thought there was one other ingredient in the batch we tasted...but maybe that's your secret, never to be divulged.
Ahh, man, I LOVE potato pancakes! My grandma used to make them for me when I was little. There's nothing like 'em.
